Artic Char with Roasted Beet Salad and Moroccan Couscous

Sometimes I amaze even myself.  New item at the Stop ‘N Shop, Arctic Char. On sale.  Blamo.

Soak the fish in blended garlic, lime juice, salt, sugar and dried chipotle.  Give it the business with your grill pan for ten minutes or so.  The skin slips off and you can fry it crispy if you like (pictured left).  This would work with salmon also, but the char is fattier and so much smooooooooooooother.

For the couscous the wife found this Moroccan sauce- blended cumin, coriander, lemon, paprika, garlic, red pepper flakes, shallot, olive oil and fresh parsley.  Looks like it came out of a box and tastes about a hundred times better. On top is roasted beet salad with nothing but lemon, onion and cumin.

This was one of the best meals I’ve had in a long time.  But what I’m most proud of was that none of this was planned.  Obviously, I had the beets and the char, but this kinda just came together as the day went on.  Could it have been awful? Sure.  But food fortune has favored the bold (this time, anyway).
