01.06.09: dinner. (healthy spaghetti and meatballs)


Sunday night Italian dinner, guilty post New Year’s style.  Sadly, a lifetime of Sunday red sauce on pasta has left me and my siblings without a taste for the traditional fare.  It reminds me of an episode of The Restaurant I just saw where Rocco can’t roll meatballs as round as his mom does.  The plight of every Italian son…

So, this is a health-food version of the classic.  The meatballs are made from ground turkey and baked in the oven (in a muffin tin, thanks Good Eats) and the pasta is actually spaghetti squash.  In the winter its good stuff and there are plenty of recipes online for cooking it.  Here’s the sauce, based on a formulation from my friend who lived in Rome:

Bring two cans of petite cut Del Monte garlic and olive oil tomatoes (I use any excuse I can to use these) to a simmer with lots of sliced garlic, salt and red pepper.  Reduce until it stops being runny.  If it sounds too simple, consider that one of the best pizza places in New Haven uses the same sauce for their special Margherita pizza.  Add fresh parm and enjoy.
