Simplest weeknight meal ever. After eating what felt like a side of bacon the night before (pork roast article forthcoming), I opted, as I often do on Mondays, for fish. I guess it’s kind of like my weekend dinner excess detox. Plus, I usually buy fish on Sat/Sun and if you don’t eat that stuff by Monday, well, you’re outta time, baby
Anyway, this is just pan seared tilapia with some bread crumbs and ground chipotle pepper on top of lemony orzo. Gratuitous addition of tomatoes to interrupt the beige-ness of the plate only. Dinner can be unbelievably nutritious, and satisfying to both the palate and culinary sensibilty without being a big deal.
